Apple Strudel Coffeecake

4 eggs
2 cups sugar
1 cup vegetable oil
3 tsp. vanilla extract
3 cups all-purpose flour
3 tsp. baking powder
1 tsp. salt
1/2 cup orange juice
3 tsp. ground cinnamon
1/2 cup sugar
5-6 tart cooking apples, peeled & sliced

Preparation:
Preheat oven to 325 degrees F. Mix eggs, sugar, oil and vanilla. Mix flour, baking powder and salt and add to egg mixture alternately
with orange juice. Combine cinnamon with sugar. Layer in greased bundt pan as follows: 1/3 egg mixture, 1/3 sliced apples and 1/3 cinnamon
mixture. Repeat 3 times. Bake for 1-1/2 to 2 hours.


Cranberry Applesauce Cake

1 stick margarine
2 cups sugar
2 eggs, beaten till smooth
1-1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. allspice
1 tsp. salt
2-1/2 cups flour
1 (16oz.) can applesauce
1 to 1-1/2 cups cranberries
1/4 cup raisins
1/4 cup walnuts (optional)

Mix together the margarine, eggs and sugar and beat until smooth. Add the baking soda and spices and mix thoroughly.
Add the flour and salt, then the applesauce and mix. Add the cranberries, raisins and nuts. Combine thoroughly. Spray a
9x13 baking with non-stick spray and bake at 350F for 45 minutes.


Hot Milk Sponge Cake

4 eggs, beaten
2 cups sugar
1-1/4 cups milk
10 Tbsp. butter
1 tsp. vanilla
2-1/4 cups flour
2 tsp. baking powder

Heat milk and butter until hot, but not boiling. Mix all ingredients thoroughly and pour into a 9x13 baking pan. Bake at
350F for 30-35 minutes.
